  2. Rinse the chicken inside and out with cold water and pat it dry with paper towels.

  3. Tie the legs and wings together to help an even cooking surface

  4. In a small bowl, whisk together the honey, smoked paprika, chili powder, fresh cilantro, fresh mint, fresh lime juice, and minced garlic to create a rub.

  5. Rub the sweet and spicy seasoning mixture all over the chicken, making sure to get it under the skin and inside the cavity.

  6. Skewer the chicken onto the rotisserie spit and secure it tightly. Secure through the cavity & out through the neck, positioning off centre towards the point to be inline with the direct heat of coals once attached to the motor.

  7. Place the spit on the grill and cook the chicken for about 1 to 1 1/2 hours, or until the internal temperature of the chicken reaches 165°F (74°C) in the thickest part of the meat. Try to maintain temperature with the hood closed for the first 45 minutes for an even cook.

  8. Remove the chicken from the grill and let it rest for about 10 minutes before carving and serving.
